Pancakes have become a Saturday morning tradition in our house. It all began when my 10 year old decided that he was going to start waking up early and mixing up pancake mix before anyone else was out of bed. We have tried out many different pancake recipes and mixes. Many of the paleo recipes include almond flour or other nuts. This options was always challenging for us, because my son Max cannot have most nuts. We would always end up making two different batches of pancakes, one paleo and another gluten free option for him.

Then we got hooked on these easy 3-ingredient pancakes and all of those problems were solved! These are paleo, but do not include any nut flours! Only 3 simple ingredients that most households always have on hand! Bananas, eggs, and baking powder! That’s it! There are some other things you can always add in or on top to enhance the recipe, but they are really great even when using just these three things! We typically always add cinnamon to our pancakes, some other topping ideas include: maple syrup, honey, chia seeds, hemp seeds, chocolate chips, shredded coconut, chopped walnuts, blueberries, strawberries, or any of your favorites!

INGREDIENTS:

  • 4 eggs

  • 4 small bananas or 3 large bananas

  • 1/4 teaspoon baking powder

In a medium bowl beat the eggs and whisk in the baking powder. Add in the bananas and using a fork mash them against the side of the bowl. Stir to combine all of the ingredients once the bananas are mashed. The pancake batter will be runny and lumpy. Heat a large cast iron skillet over low heat. Add some coconut oil. Using a tablespoon measuring spoon scoop about 1 to 2 tablespoons of pancake batter into the pan for each pancake. They turn out better when they are made smaller. If you make them too large they are difficult to flip and don’t rise as well. Allow them to cook 1-2 minutes before flipping. They will become very golden brown in color, and the banana will start to caramelize in the pan, yummm! Serve hot with your favorite toppings! I listed some of our favorites above.
