Cauliflower Fried Rice

This cauliflower fried rice is a go to recipe for busy week nights, and it's great because you can change up the recipe easily based on what you have on hand! Trader Joe's frozen cauliflower rice is perfect to keep stocked in the freezer, making this recipe a cinch to throw together anytime! Since my kids are hit or miss with eating cauliflower rice, I took the wonderful advice of a friend and mixed theirs with some real rice! They never knew the difference!

RECIPE:

  • 1 onion, diced

  • 2 carrots, diced

  • 3 garlic cloves, minced

  • 1 cup broccoli, chopped

  • 3 cups cauliflower rice

  • 3 eggs

  • 1 cup of chicken, cooked and chopped (or any other protein of choice)

  • coconut oil

  • sesame oil

  • coconut aminos

  • 2 green onions, chopped

DIRECTIONS:

Heat pan or wok to medium heat with a tablespoon of coconut oil. Beat eggs in a bowl and add to pan, scramble until cooked through. Remove eggs from the pan and set aside. Heat a couple tablespoons of coconut oil with a couple teaspoons of sesame oil in the pan. Add the onions, carrots, and broccoli. Cook until tender. Add the garlic, cook for 1 minute. Next add the cauliflower rice and sauté 3-5 minutes or longer if cooking from frozen. Add the cooked eggs, chicken, and coconut aminos to taste. Allow it to heat through, season with salt and pepper and garnish with green onion.
