Kale Taco Salad

Since kale has some crazy health benefits I thought I would try replacing romaine with it for a taco salad. You could use any lettuce you'd like, or even a blend. However, I would encourage you to throw some kale in there. I will share some of its health benefits below. 

Kale is rich in vitamins K, A, and C, along with other nutrients. Kale supports heart health, detoxification, and cancer prevention! Kale is a cruciferous vegetable, which are known for being cancer-fighting. Cruciferous vegetables are high in glucosinolates, contain antibacterial properties, inactivate carcinogens, are anti-inflammatory, reprogram cancer cells to die off, and prevent tumor formation. 

RECIPE

  • 1 bunch of Kale or other lettuce, washed, dried, and chopped

  • 1 tomato, sliced

  • 1 avocado, sliced

  • 1 bell pepper, sliced

  • 1/4 cup red onion, diced

  • 1/4 cup cilantro, chopped

  • black beans (optional - omit for whole30 and paleo)

  • 1.5 lbs organic ground turkey

  • evoo

  • 1/4 cup water

  • taco seasoning

In a skillet heat evoo on medium high heat. Add ground turkey and cook until browned. Add 1/4 cup of water and your taco seasoning (i like to make my own). Reduce heat to low. Combine other ingredients in a large bowl. Mix up salad dressing (details below). Top salad with ground turkey and dressing. 

DRESSING RECIPE

  • 1 large avocado

  • 1/2 cup cilantro

  • 1 garlic clove

  • 2 tablespoons lime juice

  • 2 tablespoons evoo

  • sea salt

  • 1-2 tablespoons water

Blend together all ingredients except for the water in a food processor. Slowly add the water until smooth.
