Pesto Zucchini Noodles with Sausage and Peppers

The kids went back to school yesterday, it was a big day! I am typically so ready for school to start back up after the long summer break, however this year felt different. We are entering into a whole new chapter, all three kids are now in school for a full day! My youngest started Kindergarten! It's so bittersweet, I am excited for the kids to all be together at school, and my heart just melted as I watched my boys walk their little sister out to drive lane with their arms around her at the end of the day! But I will be honest, I am also going to miss the days of having them at home! Isn't it funny how when you're in the thick of it you can't wait for a little break, but now that they are all in school I am missing them! It all goes by so very fast! 

The kids all did amazing, they loved their teachers, made new friends, and are so excited to be back in school! It's going to be an amazing year! I am looking forward to having more time to pursue my passions, and get all the things done around the house that always need to be done. Then when the kids come home from school I can give them my full attention! 

We kept dinner super easy last night as I needed to throw together something quickly after being gone at work all day. These pesto zucchini noodles with sausage and peppers made for a great light and healthy dinner. I did however make the kids some gluten free pasta in place of the zucchini noodles. They ate their zucchini diced and sautéed instead, we are still working on getting them fully onboard with zucchini!

RECIPE:

  • 4 zucchini, spiralized

  • 1 bell pepper, sliced

  • 5 chicken and apple sausages, sliced (we used Aidells)

  • evoo

  • salt and pepper

  • 1/2 teaspoon onion powder

  • 2 green onion, diced

  • 1 avocado sliced

  • Trader Joe's Vegan Kale, Cashew & Basil Pesto

DIRECTIONS:

Saute the sausage and peppers in olive oil, add salt, pepper, and onion powder. Cook until tender and beginning to brown. In another pan sauté your spiralized zucchini with olive oil, salt and pepper. I like to just toss in the pan for about a minute so they don't get too soft. Serve sausage and peppers over the zucchini noodles with green onion, avocado, and pesto! Done, so easy and so good! Enjoy!
