Chia Seed Pudding Blueberry Parfait

This parfait is layered with a green smoothie, fresh blueberries, and a paleo granola. You can make any variation of smoothie you'd like to change up the recipe. Most of my smoothies end up green, it just seems like an opportunity to get extra greens in that I can't pass up. Spinach and Kale are my go to greens. 

Kale is rich in vitamins K, A, and C, along with other nutrients. Kale supports heart health, detoxification, and cancer prevention! Kale is a cruciferous vegetable, which are known for being cancer-fighting. Cruciferous vegetables are high in glucosinolates, contain antibacterial properties, inactivate carcinogens, are anti-inflammatory, reprogram cancer cells to die off, and prevent tumor formation.  Wow, amazing right? Go throw some in your next smoothie! 

Blueberries are also a great addition as they are one fruit that is loaded with health benefits. They are one of the best sources of antioxidants! Antioxidants prevent cell damage and protect against chronic disease, including cancer. Blueberries are also beneficial for brain health, reducing inflamation in the body, and promoting heart health!

CHIA SEED PUDDING RECIPE:

  • 1 can coconut milk

  • 1/4 cup chia seeds

  • 1 tablespoon honey

  • 1 teaspoon vanilla

Mix all ingredients together and refrigerate over night. Top with fruit, layer with your favorite smoothie, or eat it plain!
