Citrus Salad

Does anyone else ever just crave a big bowl of salad or veggies? That’s how I felt today after eating all the holiday food and treats this last week! I love salad and could eat it all day long… unfortunately everyone else in the family doesn’t agree with me on that one. So I typically make them for myself for lunch, occasionally for dinners, and I love making them when we gather with friends and family.

This recipe is really easy to throw together and makes a great winter salad with the fresh citrus and pomegranate seeds. The butter lettuce makes it light and refreshing, but you could easily substitute with another green (I will sometimes use arugula).

INGREDIENTS:

  • 1 - 6 to 8 oz bag of butter lettuce

  • 2 cara cara oranges, segmented

  • 1 avocado, sliced

  • 1/4 cup pomegranate seeds

  • 2 tablespoons goat cheese, crumbled (optional, omit for dairy free)

  • 1/4 cup pistachios, shelled ( i forgot these in my image above, but i recommend not leaving them out!)

DRESSING INGREDIENTS

  • 1/4 cup extra virgin olive oil

  • 2 tablespoons red wine vinegar

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon dijon mustard

  • salt and pepper

Combine the salad ingredients in a large bowl. Next in a small glass jar combine the dressing ingredients. Whisk or shake to combine. Toss desired amount of dressing over the salad just before serving. Enjoy!
