This tomatillo ranch is great over a salad or used as a dipping sauce. I have also used this dressing on top of my loaded sweet potato fries. You can find that recipe HERE.
- 1 cup primal mayo
- 1/2 cup canned full fat coconut milk
- 3 tomatillos, husked and chopped
- 2 tablespoons of onion, chopped
- 3 garlic cloves, minced
- 1/2 lime, juiced
- 1/2 cup cilantro
- 1/2 teaspoon dried dill
- 1/2 teaspoon sea salt
Blend all of the ingredients together in a blender or food processor until smooth. Store in an air tight container in the refrigerator. Consistency will thicken once refrigerated.
