Loaded Sweet Potato Fries

These loaded sweet potato fries are a hit in our house and they are super easy to throw together! Especially if you prepare your meat ahead of time in a crockpot. 

DETAILS

  • sweet potato fries (see recipe below)

  • shredded chicken or other meat (I cooked mine in a crockpot with some salsa verde on low for 6 hours)

  • onion and red bell pepper, diced and sautéed in avocado oil until caramelized.

  • guacamole

  • cilantro, chopped

  • tomatillo ranch (recipe HERE)

  • lime wedges and jalapeno for garnish (optional)

For sweet potato fries preheat oven to 450 degrees. Slice your sweet potatoes into strips, making sure to keep all of your fries about the same size for even cooking. If you have time you can soak the potatoes once sliced in a bowl of cold water for an hour or two to help draw out excess starch. Remove potatoes from water and let dry. Once dry toss potatoes in just enough coconut or avocado oil to coat them and season with sea salt. Sometimes I will toss mine in a thin coat of arrowroot powder, but this is optional. Line your baking sheet with parchment paper and bake for 20-30 minutes depending on their thickness. Half way through flip the fries to help them crisp up evenly. 

Once sweet potato fries are done cooking place on a plate and top with shredded chicken or other meat. Top with onion, bell pepper, guacamole, and tomatillo ranch. Garnish with cilantro, jalapeno, and lime wedges.
