One Pot Taco Pasta

This dinner is so easy to throw together, you can even mix it all up in one pot and done! I guess technically you may need another pot to boil your pasta, but you could do that first and still use the same pot. Or boil your pasta ahead of time. We used Banza pasta, which is made from chickpeas and is gluten free, but you could use any pasta for this recipe. My family kinda goes crazy over this recipe, definitely a kid pleaser as they love their pasta! I like to serve it with a side of veggies, typically broccoli, to make sure we are getting some greens in!  

RECIPE:

  • 16 oz gluten free pasta, cooked
  • 1 1/2 lbs grass-fed ground beef or organic turkey
  • 2 tablespoons taco seasoning
  • 16 oz jar salsa
  • 1/2 cup water
  • 1 avocado sliced (optional garnish)
  • 3 tablespoons of cilantro, chopped (optional garnish)

DIRECTIONS:

Brown ground beef or turkey in large pot over medium high heat. Drain the extra fat and then add the taco seasoning and water. Simmer on low for 5 to 10 minutes. Add the cooked pasta and jar of salsa to the pot and stir to combine. Cook until heated through. Serve with sliced avocado and cilantro on top.
