Farmer's Market Salad
Salads are one of my favorite meals to eat, i love loading them up with tons of veggies and toppings! This one in particular was fun to put together because I made it from produce that I picked up at our local Gilbert Farmer’s Market. One of the Farm stands had a create your own salad mix station, and I loved selecting from the beautiful assortment of greens that they had! I also picked up carrots, radish, and fresh herbs.
SALAD RECIPE:
1 bag of Mixed Greens
1 small cucumber, sliced
2 radish, sliced
1/4 cup carrots, chopped
3/4 cup grape or cherry tomatoes, halved
2 avocados, sliced
1/4 cup goat cheese, crumbled (optional- omit for whole30)
Combine greens in a large bowl and top with veggies and cheese if using. Toss with dressing before serving. Dressing recipe is below.
LEMON VINAGARETTE
2 tablespoons fresh lemon juice
6 tablespoons extra virgin olive oil
1 garlic clove, minced
1 tablespoon spring onion, diced
salt and pepper
Whisk ingredients together in a small jar and toss over salad before serving.
