Homemade Plantain Chips

We buy a lot of plantain chips, but I was excited to finally try making them homemade! I have really enjoyed experimenting with different plantain recipes, from tortillas, to pancakes they make for a great paleo, grain free option! 

You can season these chips with any of your favorite seasonings, even just a simple sea salt would be great! We use Emeril Lagasse's essence recipe, you can find it HERE. Enjoy these chips plain, or with your favorite dip. We served them with a mango guacamole.

RECIPE

  • 1 green plantain

  • 1-2 tablespoons coconut oil

  • Emeril's seasoning or keep it simple with sea salt

Preheat oven to 350 degrees, and line a baking sheet with parchment paper. Peel your plantain and cut in thin slices. Make sure to keep all slices the same width as much as possible, this will help the chips to bake evenly. Toss with coconut oil and seasoning in a small bowl and place onto parchment lined baking sheet without over lapping. Bake for 20 to 25 minutes, or until golden brown.
