Kid's Snack Idea - Sun Butter Rice Cakes

Here’s a really simple and healthy snack that you can throw together quickly for your kids! We call them sun butter rice cakes, but if you’re not nut free you can top with any spread you’d like. I also like to add some extra toppings for additional health benefits (more details below) and my kids love a drizzle of honey on top!

We actually make these all the time for lunches as well! If we are packing them up for school or taking them to go (on a hike, picnic, or a friend’s house) we just put another rice cake on top to make a sandwich. These thin rice cakes are perfect for that! They’re not just for kids, I love eating them too!

We use an unsweetened sun butter spread and like to add a little cinnamon on top. Cinnamon is loaded with antioxidants and it also has a wide range of other health benefits, including antibacterial, antifungal and anti-diabetic properties. We also like to sprinkle on chia seeds and hemp seeds. If you don’t think your child would be up for eating these, you can try making the rice cake into a sandwich and they probably won’t even notice that they are inside. Chia seeds are a superfood that offer a long list of important nutrients, including fiber, protein, manganese and calcium, along with plenty of antioxidants and omega-3 fatty acids. Chia seed benefits include promoting healthy skin, reducing signs of aging, supporting the heart and digestive system, building stronger bones, and more! Hemp seeds are another superfood that is consumed for its antioxidants and omega-3 and omega-6 fatty acids. Hemp seeds help to improve digestion, balance hormones and improve metabolism. I will often place a mixture of chia and hemp seeds in a small spice jar so I can easily sprinkle them on top. You can also get creative with other toppings! I will sometimes sprinkle some mini chocolate chips on top, which turn it into a great healthy after dinner treat. I like using the enjoy life chocolate chips, which are dairy-free.
