Thanksgiving Cranberry Relish

Thanksgiving is one of my favorite holidays! I love gathering with family to enjoy a large meal together, the cool weather, the anticipation of Christmas, and sharing thoughts of gratitude with once another! My family has always been big on cooking and I have fond memories of everyone hustling around in the kitchen to help prepare Thanksgiving dinner.

This cranberry relish is a recipe that my mom has been making for years and last year I decided to try swapping out the refined sugar for coconut sugar to make it paleo friendly. You would never know the difference, I look forward to eating this each year with the turkey. This recipe is also super easy to throw together and can be made ahead of time!

INGREDIENTS:

  • 12 ounce bag fresh cranberries

  • 1 orange

  • 1/2 to 3/4 cup coconut sugar

DIRECTIONS:

Wash the cranberries and the orange. Slice the orange into eighths, leaving the peel on, remove any seeds. Place half of the cranberries and orange slices into a food processor and blend until evenly chopped. Place in a bowl and combine the remaining cranberries and orange slices in the food processor, blending until chopped. Pour into the bowl and stir the sugar into the mixture. Use more or less to taste. Refrigerate for at least one hour to let the flavors combine or until ready to serve.
