Chicken Salad with Green Apple & Walnuts

I love mixing up a batch of chicken salad at the beginning of the week for lunches. Bonus - this recipe is paleo and whole30 approved as long as you use a compliant mayo in the recipe. This recipe can also easily be switched up! Try making with green apples and walnuts or substitute out for grapes and cashews, both combinations are great!

RECIPE (serves 6 to 8)

Ingredients:

  • 4 cups chicken - cooked, shredded and chopped

  • 2 celery stalks, diced (about 1/2 cup)

  • 1/3 cup red onion, diced

  • 1 small green apple, chopped (or substitute with red seedless grapes)

  • 1/2 cup walnuts, chopped (or substitute with cashews)

  • 2 tablespoons fresh dill, chopped

  • 1 tablespoon fresh flat leaf parsley, chopped

  • 1 teaspoon salt

  • freshly ground pepper

  • 1 cup mayo (whole30 approved)

  • Butter Lettuce, washed and dried

Directions:

Place all of the ingredients together in a large bowl (leaving out the nuts), stir until well combined. Refrigerate, when ready to serve stir in the nuts and place the salad into your butter lettuce cups.
