This salsa is a recipe that we have started to make every week! Casey and I love eating it with our eggs and avocado for breakfast. It has such great, fresh flavors! It is also pretty easy to throw together, not a lot of chopping because everything gets diced up in the food processor! If you don’t have a food processor you can make it in your blender, however it will not have the same texture and small pieces of ingredients like it does when made in the food processor.

This is a great recipe to have on hand for any taco night or it is an easy homemade appetizer to bring to a party! It is mild with just a little bit of a kick, of course every jalapeño can vary in spice... but I always de-seed mine! All of my kids also love this salsa and they don’t like too much spice. If you prefer a spicy salsa you can leave the jalapeño seeds in or add in another jalapeño.

RECIPE

Ingredients:

  • 1 - 28 oz can of whole tomatoes, drained

  • 1 - 10 oz can of diced tomatoes with green chiles, drained

  • 1/2 cup white onion, roughly chopped

  • 1 jalapeño pepper, de-seeded and de-veined

  • 3 green onion stems, ends removed

  • 4 large garlic cloves

  • 1/2 bunch of cilantro with stems

  • 1 lime, juiced

  • 1 teaspoon salt

Directions:

Place all of the ingredients into a food processor and pulse just until everything is evenly combined. Pulse longer if you prefer a thinner salsa. Store in an airtight container and refrigerate until ready to enjoy!
