Summer Grapefruit Cocktail

This cocktail is a twist of a greyhound and a paloma! I love the beautiful blush pink color that grapefruit creates in a cocktail and a greyhound is one of Casey’s favorite drinks… so i picked up some grapefruit at the store earlier this week for a cocktail. Most of my favorite drinks have lime, so I thought I would try a combination of the two!

This cocktail is naturally sweetened with just a little bit of maple syrup, however you could substitute with honey or leave the sweetener out all together! There is already some natural sweetness from the grapefruit! I served these up with salt on the rim, however I think we both ended up preferring it without! They are very refreshing and make a perfect summer cocktail!

A few tips when mixing up cocktails but not straying too far from a paleo diet. Alcohol is not paleo friendly, however it is important to have balance and enjoy a drink occasionally! 

Since this recipe is using vodka, I will speak into that... most vodkas are made from wheat, corn, grain, and rye, which are not paleo friendly.  However, because vodka is not brewed, but is a distilled spirits the gluten shouldn't be present, but there is a risk of cross contamination.

You also have another option, because there are some brands of vodka that are made with paleo friendly ingredients like potato and grapes. Some brands that you could look for are: Cîroc, Binboa, Vikingfjord, Boyd and Blair, Chase, Chopin, and Cirrus.

Another thing to consider if you are going to drink vodka, is what you are mixing it with. Use paleo friendly ingredients such as club soda, fresh citrus, or coconut water instead of sugary processed mixers. You can also use natural sweeteners like honey, coconut sugar, or maple syrup! I hope you enjoy this cocktail as much as we do! 

RECIPE (serves 2)

Ingredients:

  • 1/2 cup fresh grapefruit juice

  • 2 tablespoons fresh lime juice

  • 1 tablespoon maple syrup or honey

  • 1/2 cup vodka

  • 1/2 cup club soda, divided

  • ice

  • salt for rimming glasses (optional)

  • fresh mint leaves for garnish (optional)

Directions:

Rub the rim of a highball glass with a grapefruit or lime wedge and dip the rim in salt. Fill glasses with ice. Combine grapefruit juice, lime juice, maple syrup, and vodka in a small pitcher. Stir to combine. Divide the mixture between two glasses, leaving room for 1/4 cup of club soda in each one. Add the club soda, stir. Garnish with fresh mint and enjoy!
